You would think that all we eat here is pancakes……but with the selection of the Sour Dough, Best Waffles, Mom's Pancakes…..I have something for every occassion (breakfastly speaking)
2 C. buttermilk
1 T. sugar
2 C. flour
3 t. baking powder
1 t. salt
1 t. soda
Mix dry, add wet…..barely stir. Fry on hot oiled griddle.
*Buttermilk is the issue here……you can use milk with a bit of lemon juice in it…..or a bit of vinegar. I will tell you that buttermilk is costly to keep on hand….but is a cinch to keep around. But it TASTES better!!!!!
*Make your own buttermilk: Take a pint or quart of milk, put in clean glass jar with lid. Stir into it 1/4 c. of purchased buttermilk and let sit in warmish place (about 75º) for 12 hours. Buttermilk is alive and it will be so happy to have new milk to grow into. Now if you are diligent, you can have an on going supply of fresh buttermilk. Do put your new "friend" in the frig once it gets thickened up.
