So here’s my deal on muffins…….don’t like the crumbly ones and don’t like the sickenly sweet ones.  I found a recipe that was so close to perfect, only needed a bit of work to be ‘my’ kind of perfect.

Marvelous Poppy Seed Muffins

*makes 24 of the smaller ones and a nice fat dozen of the big ones.

3 c. all purpose flour

2 c. sugar

1/4 c. poppy seeds

1-1/2 t. baking powder

1-1/2 t. salt

3 eggs

3/4 c. oil

1/2 c. powdered milk

1/2 c. buttermilk

1 c. water

1-1/2 t. vanilla

1-1/2 t. almond extract

Easy to mix……Mix the dry, add the wet, stir til  blended.

These rise alot, so don’t overfill.  Bake 25-30 mins. in  350º oven.  I raise my oven rack one notch when doing muffins, hate to have dark bottoms.  These do not get browned on top very much….just firm when done.

What you get is a muffin that is a bit cakey, moderately sweet and keeps like a dream.  I tried using straight milk instead of the buttermilk and powdered…and it just wasn’t right.  Yes, I was splitting hairs but it had to be perfect.

This has become my ‘go to’ recipe.

These are the Apple Cinnamon Muffins.

*Options

Change almond extract for lemon…….(Poppy Seed Lemon)

change poppy seeds for 1-2 cups blueberries and almond extract.  (Blueberry Lemon)

Add dried apples and cinnamon…….(Apple Cinnamon)

Chopped prune and walnut was really good. (Prune Walnut)

This recipe is just a blank slate for your taste buds……doll it up anyway you want, the texture holds.
