This comes from my ole neighbor Inez……did corn like this one time and never went back to the blanch type recipe.
Shuck corn, pick off silk (baby hair brush works well here).
Using very sharp knife, slice corn off cob. I take and use a cookie sheet with sides and in one end, but a smallish piece of fabric (that you will probably throw away when done). Stand corn cob up on end on top of rag, then cut corn off cob. Don't use a large rag……you want the juice, but running your knife into your cookie sheet will only dull your knife quickly.
After you've done a few ears, mix in large sauce pan.
9 c. raw corn
1/4 – 1/2 c. sugar
1 t. salt
2 c. water
Bring to boil, boil for 5 mins. Stir constantly, cool some and then bag in freezer bags. Freeze.
You no longer have the scalding owies on your arms and hands from blanching……no more huge pot to empty.
And it tastes like heaven!!!!
