Russian Mushroom & Potato Soup

*comes from

5 T. butter divided

2 leeks (I used 1 med. onion)

2 large carrots

6 c. chicken broth

2 t. dill weed

2 t. salt

1/8 t. pepper

1 bay leaf

2 pounds potatoes, peeled & diced

1 pound fresh mushrooms, sliced

1 c. half & half

1/4 c. flour


1. Melt 3 T. butter in a large saucepan, add leeks & carrots. Cook 5 mins. add broth & seasonings.  Mix in potatoes, cook 20 mins. til pots. are tender.  Add sliced mushrooms.  (orig. recipe has you saute mushrooms in remaining butter…..I didn't)

2. Mix half & half with flour til smooth, stir into soup to thicken.

A wonderful hearty soup, rich & full of spuds…..and if you are a mushroom lover, it's to die for.
